Personal Apple Pies

Personal Apple Pies

This is my families favorite treat! This recipe for personal apple pies is easy to make, and is just so delicious. Great for on snowy, cold days, this hot treat is truly Sweet and Simple!

Step 1: Pie crust

Cut squares of pre-made roll-out (I used store brought) pie dough, and place into muffin cups, and then place the muffin cups into muffin tins. Save the access strips for the lattice top later.

Step 2: Apple filling

Skin and cut two whole granny smith apples into thin cubes/squares and fry in saucepan with butter on medium heat for about 2 minutes on each side or until golden brown. After they are brown add a few tablespoons of white and brown sugar and about a teaspoon of cinnamon.

Step 3: Making the caramel sauce

Into a saucepan at medium heat add a 1/4 of butter along with 1/4 of brown sugar. Stir the butter and brown sugar until thick and then add a 1/4 of half and half or heavy whipping cream. Stir until combined. Pour caramel into bowl and let cool until step 5.

Step 4: Lattice topping:

To make the lattice top simply cut thin strips of the access dough and carefully pinch the strips over the sides of each pie. This is what the lattice should look like-

Step 5: Using the caramel sauce:

Spread the now rich and thick caramel sauce over each pie (you are trying to cover all the lattice in caramel) and the pies are complete!

Step 6: Bake:

Bake pies in a preheated oven at 350 for about 20 minutes.

Please note I found picture 3,4, and 5 on Google images and give them FULL CREDIT.

Cookie Brownie

Preheat oven to 350 degrees and take out a cookie sheet: does not need to be greased or sprayed.

Step 1: Make or buy some regular, simple, chocolate chip cookie dough, and make one or two inch balls of dough. Use the back of a spoon to flatten the cookie dough like a pancake.

Step 2: Take an already cooked and cooled brownie and break into one inch balls, flatten with spoon, and place on top of the cookie dough.

Step 3: Repeat step one placing the newest flat cookie dough circles on top of the brownie circles.

Step 4: Slightly pinch edges of the cookie dough on the bottom and top of the brownie sealing the brownie inside.

Step 5: Place cookie/brownies on cookie sheet and place in oven for at least 8 minutes.

Enjoy!

Sweet Raspberries

During the summertime I spend most of my days outside enjoying the beautiful weather and then hot sun. With that beautiful weather and the hot sun brings perfect growing season for plants. At my house we have wild raspberries growing in the bushes. Here is a very, very, very simple recipe to make wild raspberries even sweeter. Collect about 1 cup of raspberries and after washing them free of bugs dirt etc. place them in a bowl with about a tablespoon or so of granulated sugar. Mix well and serve plain or on top of vanilla ice-cream.
